Crock Pot Stuffing
Yield: stuffing for 42 half pound butterflied pork chops

3 cups cornmeal
1-16 ounce package of Pepperidge Farm® seasoned stuffing mix (7 cups)
3 cups unseasoned cubed wheat and white stuffing
2 eggs
1-10 ¾ ounce can cream of celery soup
1-10 ¾ ounce can cream of mushroom soup
1-10 ¾ ounce can cream of chicken soup
1-14 ounce cans 99% fat free chicken broth
1/2 cup no-fat evaporated milk
1 medium onion, chopped
1 tablespoon minced garlic
1 ½ cups chopped celery and leaves
½ cup (1 stick) butter, melted
2 teaspoons poultry seasoning
½ teaspoon salt
1 teaspoon cracked pepper
no-stick baking spray

Mix together cornmeal, stuffing mixes, cream of mushroom soup, cream of celery soup, cream of chicken soup, chicken broth, evaporated milk, onion, garlic, celery, butter, eggs, poultry seasoning, and salt and pepper until all the ingredients are blended. Spray the large crock pot with no-stick baking spray. Spoon the dressing into the crock pot. Cover and cook on low for 3 hours. If the stuffing becomes dry, add an extra 1/3 - 1/2 chicken stock and thoroughly stir into the stuffing.
